Renowned for their quality, Gillardeau oysters are a runaway success. At the time, Maison Gillardeau was already supplying Les Halles de Paris.
Gérard Gillardeau, then head of the company, gives birth to the emblematic Gillardeau oyster. The quality of its appearance and the generosity of its flesh have quickly made it a byword for excellence among oyster lovers.

To combat counterfeiting, Maison Gillardeau equips its packaging line with a laser, and engraves each of its oysters with the Maison logo, symbolizing their authenticity.
